Make a hard cheese with the rind imprinted with the traditional Manchego basket-weave. Removable patterned collar makes for easy cleaning.
First pressing should be done without collar, using only standard coarse cheese cloth. All subsequent pressings should be done with the basket-patterned collar in place.
