RA21 is a Mesophilic/Thermophilic culture blend commonly used in making Cheddar, Colby, Feta, Chevre, or other semi-soft or soft cheeses. A very versatile culture. It has more proteolysis than with a straight mesophilic culture alone.The flavor slightly varies from what is produced using any of the MA series. A good culture to use with sheep's milk.
