The TA 60 Series from Danisco is a reliable multipurpose thermophilic single-specie culture of Streptococcus thermophilus. It can be used as a standalone starter or blended-in as an adjunct with other cultures. It has medium-high acidity and can stay alive even when cooking or scalding curd in temperatures as high as 53°C (127°F). This combination makes it ideal for anything from Mozzarella, Buratta, and Provolone, to Romano, Parmesan, Alpine Tomme styles, Emmental, Gruyère, Caciocavallo, Provolone, and many other styles.
