Our lipase powder is mild, made of a kid or calf blend. Lipase enzymes enhance flavor and add an extra "zestiness" to your final cheese. They are particularly effective in hard Italian-style recipes and other "Old World" fresh cheeses such as Feta and Mozzarella.
Store in an airtight container in the refrigerator or freezer. Recommended usage: 1/4 tsp. per 2-3 gallons.
